Odd hunter is tier 5. Meme tier. It will get a power boost sure, but I doubt it will be enough to go past tier 3 or low tier 2 at best. Odd Demon hunter is more likely to be high tier, since it is already a decent tier 2-3

Yes. Just compare it to any pirate deck which gets a 1 mana pirate, patches, and a 2/2 on board on turn 1, or gibberling druid which plays gibberling, embiggen, lightning bloom power of the wild on turn 1
I understand people's point that Undertaker is on paper the best 1 mana snowball card in the game but I don't see it making a huge comeback given the style of token/beast deck that is being pushing by buzzard, buzzard is just a way more powerful build around card overall especially with Master's Call and Scavenging Hyena being in the format. Undertaker requires a lot of specific low cost deathrattle minions like Leper Gnome and Mecharoo to fully utilize its potential it's a true build around in almost like a zoo deck that can't really utilize any of the deathrattle synergy in hunter class because they are mostly spells and battlecries that won't work with undertaker (Feign Death, Terrorscale Stalker, Nine Lives, Mok'Nathal Lion..).
I'm not sure this style of hunter deck works in Wild 2021 as well as it used to in standard 2015. If anything I expect Undertaker to maybe pop up in some zoo warlock list and that's it.
As a side note, I can't wait to see how much of an impact starving buzzard will have on The Marsh Queen and especially Unseal the Vault.

You know meta is not a one-sided deal, nor is it a binary comprising of control vs aggro; it's a living and reactive thing. Combo, mill and attrition decks also exist in the wild -albeit with varying rates of success.
We could potentially see the attrition and control decks like Odd Warrior, Resurrect Priest and OTK decks with stall mechanics making a comeback in response to aggro unleashed. Nobody can be sure of what the future holds for Highlander decks. I personally would prefer to play against Undertakers and Corridor Creepers any day on God's green earth than to suffer through the resurrect priest matches. Pray to your gods that they don't buff Barnes (and they still might).
I'll be looking forward to farming those attrition decks that are likely to target aggressive hunters and paladins and beat them in their own, boring game. Since Skulking Geist has lost relevancy long ago, Taunt Druid looks to be tempting. And if that doesn't work, there is always a third option.
I agree with most of your points, but there are two things to correct:
Firstly, the token style that you mention would still benefit from having Undertaker in the deck because the card was just that good. Secondly, there was no wild/standard division of ranked modes. That began with Journey to Un'goro. The card dominated the meta for a brief period of time when Azure Drake was a staple, Ice Block existed, Starving Buzzard + Unleash the Hounds combo reliably drew you cards and Savannah Highmane was the best legendary that you could run two copies of. There is no saying for sure that it will again, but we mustn't overlook its potential to fuck shit up.
Well as far as I can remember, undertaker went from being absolutely insane (arguably the best card in the meta) to complete garbage with the nerf. Cancer hunter was maybe the first deck to be so over tuned, that it got a nerfed after a rather short time. Will the revert have the same impact today? Absolutely not. Hunter will just be decent (I think) and likely poke the secret mages a bit. Undertaker can easily get 4+ health by turn 2, which makes him a real pain for most decks in the early game. Hopefully we'll get more reactive control decks and less OTK + infinite value decks as a respond.
I really hoped for undertaker to return to his former glory. He'll no doubt be useful in many other aggro decks.
I'm not sure that the Albatross is much of a decent card for Odd Hunter. There are much better options for 3-mana. You would also need many more deathrattle minions to get any sort of decent use out of Undertaker; and there's hugely better options than him for the 1-cost cards that add a lot more pressure to the opponent.
All in all, Odd Hunter might be a little better than it was before, but I don't think it is particularly "scary" when considering the other decks currently available.

With hunter getting 2 mana Starving Buzzard, they will more than ever benefit from cheap beast generators like Alleycat, Springpaw, Wolpertinger, Unleash the Hounds..

Undertaker+reinforcement with tour guide you can play it turn 3, not turn 4.
