Im currently still undecided whether Sulfuras is stronger in a control deck or a tempo deck, most people seem to be going the control warrior route but I think ill be testing some midrange variants. Im not sure how I feel about this list though, Im under the impression some of the other classes quests can have much greedier late game and could probably do a lot of damage if you played too slow.
I think you need more taunts or more card draw, with only 9 taunt (+C'thun) you will have to draw most of them almost all your taunts to get the quest done.
Stonehill Defender is not bad choice in this case, it's 2 taunts in 1 card and the 2nd taunt can be picked to suit the situation best.
That's why I included I Know a Guy, which acts as two additional taunts, while also giving the deck some flexibility with the taunts that are chosen, so the card stays generally good. Between I Know a Guy and Stonehill Defender that's an additional 4 taunts discovered, which is huge for adapting to the current game.
To me, that deck is a better control warrior deck because it has more draw, more taunts (14 instead of 13), and it's more control options, and better early game.
The goal is to try and combine C'Thun synergies with Fire Plume's Heart. Thoughts on the deck I have so far?
EDIT: I've taken out C'thun and added more early Taunt minions.

I'm taking a slightly different approach on it with:
This space intentionally left blank.

So I realized that I don't even need C'Thun in the deck to use the Twin Emperor Vek'lor, the Crazed Worshippers, and the Ancient Shieldbearers that I wanted to use, so I cut C'Thun and added some more Taunt minions. Thoughts after I updated the list?
