Rouge is a tricky class to play, even Lackey Rouge takes some getting used to. It's important to know that it's a tempo deck and tempo means making moves not to get control of the board but to get stats into play. You have very limited removal and no healing so you need to make every backstab count as much as possible. Combos are super important as well. Use them for swing turns to swing the board in your favour.
It's never a good idea to go all in and just dump your hand on curve. That will lose you games. You need to play carefully and get max value out of each minion. Force the opponent to make unfavourable trades. SI:7 Agent is only a 3/3 but he can be a big threat on his own or with just one other minion in play.
Knowing when to use Sap is also one of the keys. It's a massive tempo swing card and lets you get back on the front foot but you have to use it correctly. It's one of the cards I see the most misplays with on ladder.
Also, know when to trade and when to go face. You have limited damage and unless there's a taunt in the way you need to hit face with the 'pick.

In terms of playing the matchups, learn which cards are good in specific matchups and look for them (for example backstab is great vs zoo but weak vs warrior). Try your best to learn when to give up on the board and set up leathals with pick double leeroy (plus eviscerstes). Generally you try to get early tempo and push damage in the early game, then transition to hitting face to win. More than happy to try and help further, just let me know.

As far as deck building goes, HCT, FoK, and Shadowstep all in the same deck strike me as something that is going to cause problems.
I'm pretty anti-HCT right now. At the very least, change that for a lifedrinker.

That's all you can do with this deck. Backstab is there so that you can get your minions out with Combo effects.

Save up for a big Edwin turn if he's in hand, but you don't necessarily need him to be bigger than 8/8. He may just eat a hard removal.
First of all, your list seems suboptimal, cut the fan (Haven't seen a token druid in ages but maybe that's just me) and the thugs (thug was great las expansion but now he actually has anti-synergy with the pick) and run zilliax (It absolutely shines on the mirror) and 2 lifedrinkers (more burn, a solid body and synergizes with the pick and shadowstep and the heal is nice) and that should be the most solid version you can run in the current meta. You should definitely craft Greenskin, he's just core, amazing and a must have for this deck, he makes your Raiding Party more consistent and he literally gives you as little as 6 extra face damage (on curve pick into greenskin is +1 dmg from the second hit and a 3rd 5 dmg hit) while putting another threat on the board, the deck feels a lot weaker without him tbh.
Now regarding the actual gameplay, Tempo rogue is not a deck that tries to win the board very often, you'll gas out if that's your plan, the only games where you go for that is either the mirror (You can also try to just run your opponent down but if they get more tempo they'll just gas you out) or when you're facing a faster deck like zoo or token druid. Having said that, you have to know when to stop trying to get a board and when you just gotta ignore it, push face, try to set up lethal and hope your hand starts coming together for that purpose. There isn't an exact tell for when are you supposed to "flip the switch" from trying to not entirely lose the board, to "I don't care, me smorc face" but you should be able to identify it the more you play, it depends on a lot of variables like your hand, your opponent's hand, the state of the board, if you got Myra's or not...
The point of this deck is that you have a lot of cards that generate tempo or face damage (or both) without necessarily having to trade your minions to get a nice board state, cards like SI, backstab, evis, sap, corsairs and zilliax are amazing for this, you develop threats, gain tempo and make your opponent have to trade your board, not the other way around.
Other specific advices I got for you:
1. You want to mulligan for one of your 3-drops, either party or miscreant, both are great really.
2. A big edwin can win the game on the spot against pretty much any class but the mirror and maybe mage (conjurer's calling just denies edwin for you) so keeping him on the mulligan can be good if you have other options as well.
3. Never Prep you parties before turn 3... Why is that? Because it almost nevers serves much of a purpose but having this combo on turn 3 could serve as an activator for you SI or your miscreant or help you make a big Edwin. The only cases where I would prep a party before turn 3 is if my hand is absolute garbage and a tempo corsair on 3 is the only half decent play you got.
4. Know when to hit with the pick. The first hit is always a must, just hit as soon as you drop the weapon, no questions on this one. the second hit tho is a matter of your board and your hand. You should never attack the second time (or third with greenskin) if you don't have a valuable minion on board (SI, Miscreant, Drinker or Leeroy, maybe some lackeys like the spell one) unless you're setting up lethal from hand by doing so, the pick is arguably the best card on this deck as it packs both 8 dmg and amazing tempo behind it so use it wisely.
5. Know when to go for Myra's. This card is the glue that keeps the entire deck together, you have very little draw engines so a deck like this should be running out of gas often but Myra's is a card that allows you to draw a bunch of cards immediatly. Sometimes you just have to go for it even if the game is not looking so good and the lethal set up is not very evident, sometimes you just need to go for it and hope it all comes together. Also, sometimes it can whiff, you can get backstabs and parties when you just need to close the game, it happens, that's just the nature of the deck, sadly.
6. Try to push as much damage as possible, every single HP is important, don't waste resources or miss hits to the face. This deck is not a full on smorc deck but it's pretty close. Use your tempo tools like backstabs and saps to deal with the boards so you don't have to waste damage trading.
This deck is not as easy to play as everyone thinks, people often say you just gotta vomit you hand and go face with everything but that is false, the deck has some variance and layers that you need to know in order to start mastering it but I will say that most of the plays you have to do will get pretty intuitive the more you play, the only really tough decision-making points that'll show how skilled you are with it are pretty much the ones I stated above and some others that I might not remember right now. You do not really Control the board. At least, not in any matchup.
You just hold it enough* to reach the Face as hard as possible (and minimize damage on yours).
It's similar to old Miracle Rogue, but faster.
*knowing that "enough" is the key.
