Only 1 raiding party? That card is even more insane than it already was :)
The core package that makes thief great I think is: vendetta, burglar, cutlass+deadly, raiding party, fox. Just put that in all your decks ;) Really so strong! Just pick one late game threat like Nomi or Tak+1espionage (or maybe just only one espionage and leave Tak out) and you are good to go :) Because you can now reliably keep up the cutlass and heal, you can play a bit slower than normal tempo and smack control decks around. Its weakness now seems swarm decks like murlocs, token druid, zoo.
But I have a feeling thief rogue will be around for a while. Thats why I now play Lackeys and Togwaggle for as long as it lasts ;)

But i see that that deck is not as constant as i would like. Any ideas to improve

You need more draw to make use of all the cards you will generate with espionnage.
otherwise, espionnage = 4 mana, do nothing.

About Tess, she feels now like overkill, So meybe some rush/charge minion is going on my head. I Will update it tommorow after some more testing
I've not tested out Tak yet but in running my own list, the deck really suffers when it doesn't draw Sprint, so I can see the value in running Tak.
Shadowrisen, why do you recommend cutting Pilfer? T1 Pilfer into T2 Underbelly Fence is pretty much as nutty an opening as we've seen in a long time.
