Just a little background info about myself: I'm fairly experienced, have hit Legend once, and finish every season in rank 5 or better. Have golden Paladin (done primarily with Midrange), Druid (almost exclusively combo with some Dragon and a few Aggro game thrown in) and Mage (Mostly Tempo, some Freeze, and Mech when I initially started playing). The rest of the classes range in 100-200 ranked wins. Then there's Rogue, in which I have now about 17 or 18 ranked wins lol.
So I have an idea of what's in the Meta, what my opponent is trying to do etc. I'm currently around 10-5 (don't keep track of my phone stats but I'm 5-1 when playing on my PC with Rogue). I know it's early in the season so the ladder is a mess with agro and secret pally, but it's good practice - I went from rank 13 to 10 and dropped to 11.
I'm just curious as to what you guys generally Mulligan for versus specific matchups. Prime Sap targets (which I probably have a decent Idea of, but curious if you guys hold sap for a specific card that your opponent is probably playing i.e. a Pally playing Tirion) or if you do it for a Tempo gain (versus Priest buffed minions or buffed up Secret Pally Minion I know those are good targets because of the investment they spent mana wise to get that creature to scary levels), and what tweaks can be made to my deck list. I pretty much have every viable card in my collection and CAN craft more if need be. Cards I've considered are Loatheb (just a generally strong card) BGH (for the Tempo and 4/2 Body), Tinker's Oil, Earthen Farseer. I was thinking about about Southsea and Faceless if I included Oil for the crazy finish but feel without holding board a single taunt axes that plan.
TL;DR version. Rogue tips and Deck tweaking Ideas.

I'm not a rogue expert but I don't think Thaurissan is that good in your list. You could try switching it out for Loatheb as you mentionned. Just my two cents.

I used to be a control player like you, then I took a quick shot to the knee.
Like the other guy said, cut the thaurissan, doesn't really do much here. I'd also suggest crafting tinker's sharpsword oil, it's a really great combo finisher.
As for sap targets you pretty much got it bang on. Keep it in your starting hand only against druid in case they double innervate coin something out. Like you said, it's really good for sending back buffed minions and against matchups that you know run taunts it's good to save it for them.
Loatheb is also a really great card, can really mess up combo decks.
Overall what I'd do is -thaurissan, -tomb pillager, +loatheb, +oil, just more like a standard oil rogue list.
I'd also cut the shredder and the boom for a second oil and a deckhand but that's more personal preference.
