I'd say it depends on your opponent's deck. For quite some decks, the Shredder will be the biggest threat they'll ever play, and if not, the rest would be Antonidas, Dr Boom or something that SW:D will handle. For those, yeah, why not Entomb. Else just play a minion that will trade it ( Sludge Belcher is good at that, but that's a T4 ; Else yeah, you don't have many very optimal choices ), even unfavorably, and wait for the lategame when you're better geared. Do note that a fair share of 2-drop can be Cabal-ed, Auchenai+HP-ed or won't be able to outright kill your minions, leaving you the ability to heal them back up, so it's not that bad to let the deathrattle go off
You have a board with 3 strong minions and your opponent plays Sylvanas to try and counter it. If he doesn't concede after entombing his sylvanas, then he's a really hopeful person.

If you entomb a creature costing more than 6 mana, yes, it is a tempo swing. In many cases, they spend their whole turn on a big threat, you silence it, remove it, and place it in your deck, and can still do something else, including establihing/furthering your own board. That's a huge tempo gain.
Remember, never see a card in vacuum. Example: Sylvanas Windrunner a tempo card which in most cases is a 2-for-1 card. You either burn at least 2 cards (silence/spell/minion) to deal with her and her deathrattle, or you burn 1 card (spell/minion) and let the deathrattle take another minion. Since Priest seldom has cheap tokens or silence, you will almost always lose 2 valuable cards. Entomb makes Sylvanas Windrunner a 1-for-1 card, which is makes the opponent lose the tempo advantage (which is equivalent to you gaining tempo).
Another way to see Entomb is a very flexible tech card. How do you deal with Sylvanas Windrunner? Silence and SWD. Tirion Fordring? Silence and SWD, or SWD and Harrison Jones. In both cases you need an extra tech card (Silence, Harrison Jones), which takes away a spot for other more flexible Priest card. Priest is master of combinations or bad card draws, but with Entomb you don't need to rely on specific tech cards, it can be used on most situations.
And as a final note (as someone has already said in this thread), with Entomb you don't need any late game minions. Against aggro, you will most likely not have enough mana to play Ysera, and Priest decks usually has no problems vs aggressive deck. Against control, Entomb is disgustingly good, because you will go to fatigue and you will use your opponents biggest minion against him. Mid-Range decks are Entomb's biggest weakness, but that's why you have Lightbomb.

Yesterday i Entombed a Flamewaker. It was my opponent's second one and i already had dealt with Antonidas. I also Entombed a Druid's Violet Teacher on turn 5 plus the coin, not having any other kind of answer for it and the subsequent tokens. In both cases it paid off as i won that game from that point on, so i guess they were the right calls.

Sweet! Sylvanas is one of the best ones to Entomb, especially when you have a board. The question was, should you Entomb a lower value minion like Piloted Shredder to avoid losing the board? In some cases it's worth it.

I agree. And you really need to know the deck the opponent is playing to make that decision. Today I played a fatigue rogue. I noticed a bit too late which deck he played (or else I would have played Thoughtsteal earlier to try to get Gang Up). As soon as he played Deathlord, I Entomb'd the card. We both hit fatigue the same time and the game ended in a draw.
Are you getting value out of Mind Vision, or is it just to trigger Pyro? I'd def run at least one Holy Smite for Vol'jin synergy, and it is better with aggro/pyro. How are you doing without SW:P or SW:D? I run 2 SW:D and 2 Entomb, but that might be a bit clunky.
I imagine using a whole turn "entombing" a Savannah Highmane and losing board control by this play.. it's a amazing card in some situations (really fcking amazing, to be honest), but I have my doubts about it in this meta..

If you don't have board control by turn 6 with priest against midrange hunter, you are probably going to lose anyway. There are very few situations where I would not Entomb a Highmane. That is one of the most difficult cards to deal with effectively as a Priest.
Excaveted Evil looks so good against aggro! I will try it too, it cleans the board and give to your opponent a dead card. It's just completely useless against other controls decks (where Entomb shines). It's a good combination, let's see :]
