Confessor Paletress Pros: Fun finisher, while still allowing a heal. Cons: Inconsistent, can lose you the game (I'm looking at you Majordomo Executus...)

Vol'jin Pros: Great against Handlock, good removal. Cons: Not a finisher.
Ysera Pros: Good finisher in control matchups, RNG fun. Cons: Possible win-more card, doesn't affect board immediately, 9 mana means no heal that turn.

I would say you should narrow it down to Sylvanas and Ysera at least. They're staple neutrals and stronger cards in general. I'd go with Sylvanas personally but that's taste.
Vol'jin is really cool and one of my favorite cards to play, but I would not say he's a priority if you're looking for value strictly. I don't have Confessor but I imagine she's too inconsistent to net large benefits on her own.
Yeah I was thinking Sylvanas would be the more sensible choice. But then I asked Zetalot on stream which would be better between Ysera and Sylvanas, and he surprisingly said Ysera, which pushed me to make this post.
He might be right. I prefer Sylvanas mostly because I find Ysera a little boring to play. Sylvanas creates more interesting situations, in my opinion, and also fits Control Priest thematically. Ysera might be more valuable but I think it's very close. You won't regret it either way. :)

Haha yeah I don't think either is a bad decision. My practical side is nagging me into choosing Sylvanas, but I'm also wondering if I would play more Hearthstone if I was playing with the fun RNG of Ysera or Confessor.

Yeah, I think she's in more decks. Ysera is in Control Priest, Control Warrior and Dragon Priest. Sylvanas is in Control Priest, Control Warrior, and Druid too. Can't think of any other decks she's in on the top of my head.
Go for neutrals first if you don't have them already. If you are still building up your collection, you must craft the mandatory neutrals first so you can easily switch classes in case you get tired of playing a Tier 2 or 3 class. Don't get me wrong, my favorite class is Priest but it's much easier to ladder and build your collection with a Tier 1 class.

You are not looking for a finisher... That's not the nature of the deck. You are looking for a card that can help you develop your game and create even more problems for your opponent, and also help them reach a stage where they turn the game in your favour. So "not being a finisher" is not something to be taken into account at all here.
Paletress has the top fun rating but is inconsistent and doesn't offer you anything you can really count on for surviving or for controlling. It's a very "win more" card. Vol'jin can help a lot with your removals, but there are other ways to do that as well. Sylvanas can turn the game around and sometimes forces awkward moves from the opponent while buying you a bit of time, but in this quick meta with lots of spam minions and lethal combos, the opponent might not care for her at all. I also thought she was going to be amazing when I crafted her, but apart from being very common in lots of decks & one of the classics, she hasn't made a serious impact yet.
Ysera is not really a "win more" minion and should be used in the very late game to provide more cards & options when they are urgently needed. So if many removals have been spent beforehand and you suspect she'll survive even for just a while, she has played her role, even asking for removal resources (if there are any left).

Sylvanas is (or at least was until a while ago) almost everywhere, with Boom being the only legendary that was more popular. More examples of her use was in Warlock where she was Shadowflamed or killed through other spells or minions, Reincarnated in Shaman, sometimes Feign Deathed in Hunter etc. These small tricks are not that common anymore, but are still useful.

The funny thing with Harrison (for me) is that he almost never comes up when there's a weapon in use, and on the few times when he does, the impact is not that great (people know he might come up, so they use weapons with very few charges and almost never leave more than one on your turn). One of his advantages is that he has kind of a good body stats wise, which is not the case with Acidic Swamp Ooze, which dies easily but is mana-cheap, can be played with other cards & combos, doesn't compete for the 5 mana slot etc etc. If I had to choose between him and Paletress, it would be Paletress for sure. But not before Ysera, Sylvanas or Vol'jin.

Thanks for the insight. Sylvanas seems really good as you said, but you're right, it is a heavy aggro meta. Personally I've never had a problem dealing with her, either I usually ignore her and flood the board and play some taunts to hold her off. Everyone says she's a staple neutral legendary, but at one point, everyone said the same about Bloodmage Thalnos, and looking back, they couldn't have been more wrong. I'm still uncertain about her.

You're right though, at the very least, you'll get one dream and bait out another removal, which is really valuable especially against Control Warriors.
I will craft [card]Harrison Jones[/card] before Confessor Paletress because I need some support against control warriors, some hunters and some paladins. Just sayin'.
Whoa Harrison Jones wasn't even in my radar, but you're right, I do lose a lot to Control Warriors. Getting rid of Death's Bite and Gorehowl seems really tempting, but Acidic Swamp Ooze can accomplish the same thing, and also avoids card draw, which is actually a good thing against Control Warrior.
That being said, I'd actually consider teching a card that says "Remove enemy's armor." Those damn Justicar Trueheart warriors can go rot in hell :)

Ysera is one of the win conditions the typical Control Priest strives to hit and then ride out the value for the victory. She's one of the most resilient minions in the game dodging both Shadow Words, BGH, and simply by having 12 Health.
Vol'jin tends to be one of the stronger forms of removal for the deck even though it doesn't seem like it. He's cost at 5 which makes him a great 10 mana combo with Holy Nova or if you run Holy Smite for 6 as you're often getting huge value with like a 6/7 for 5 or better and killing their biggest threat. He's also one of the decks answers to Ysera.
Sylvanas is strangely actually kind of replaceable in the deck as she functions way more like a set-up midrange card in Control Priest moreso than other decks. Don't take this for my somehow implying that she's not fantastic for the deck, it's just she doesn't fill a hole in the deck as much as either Ysera or Vol'jin. With that being said, of the four you listed she is the most universally good card going into all manner of mid-range/tempo and control decks so I'd recommend her being your first choice to craft.
Paletress is often a win-more card. Dropping a 9 mana 5/4 and hoping for something amazing is often not going to be something you often want or need. Honestly, I'd recommend you craft Justicar or Saraad before you craft Paletress as Saraad has a similar effect but much cheaper and Justicar is surprisingly good at helping you dig out versus aggressive decks.

Right now I'm debating between Confessor Paletress, Sylvanas Windrunner, Vol'jin and Ysera.
My internal debate:
