Usually Priests are playing Highlander decks, in which case you can win by simply only dropping enough Giants for them to use it and then drop the other Giants after (usually you want to keep Clockwork Giants for after the Lightbomb as they tend to have a lot of cards in their hands)
Is it even correct to be playing around 1 card from a highlander deck? I think if you have the combo on curve, it's better to hope they don't have lightbomb. Keep in mind that if you give them too much time, their DK can come down and clear a board of giants too

I tend to agree with this mentality, although I get burned more often than not it seems (perhaps I just remember the burns more fervently).
The way I see it, you have to high roll early against them and hope they can't clear enough of it, otherwise they will win the late game. If they have a cherry Lightbomb, well that just sucks ass and you have to move on (you likely won't beat them if you can't immediately drop 2 more giants after a LB).

bait them, dont go for the naga cheese too early nor too wide, play the 4 mana mountain giant, it's a priest you'll have time to do it, as ana dditional bonus: the time i've been the most successful against priest is using stitched tracker to discover naga seawitch instead of giants, then doing the naga cheese 4 times in a row with jsut 1 giant so that i could bait all their clears, well this is assuming that you are playing against razakus, but meeh, people are sheep, the amount of razakus priests exceeds the big priests by a lot.
The best strategy against Priest is... You don't play against Lightbomb ! On turn 6, drawing 9 cards in total (or 10 if they go second), they only have 30% chance to get it, even less because they won't keep it in their hand normally (unless they know what you're playing).

70% to win a game on the spot is pretty huge.
Wait unill the hunter plays the gieants, and then play Lightbomb or Shadowreaper Anduin to blow all the giants.
Also pay attention to whether they played Shadow Visions in their first few turns. If they did, then their odds of having Lightbomb skyrocket.

As priest i fiend Naga Hunter super easy to beat, the few times they win is because of coined naga + 2-3 giants on turn 4.
