Mal'Ganis, Leeroy, Malygos and Deathwing are the only decent ones you listed. I just dusted Saraad after trying to fit it into a lot of decks to no success. Blingtron is mostly a gimick but can be fun. Sneeds and Cairne are way too slow to be viable.
Mal'Ganis opens up a bunch of viable warlock builds - Demonhandlock, Zoo, Demolock, Dreadlock
Malygos opens up some cool OTK decks - Shaman,Warlock, Priest, Rogue among them
Leeroy can be good for agro but not currently top tier. Deathwing can be good in dragon control decks.
Depends on your playstyle. If you are Spike, and just want to win, Mal'Ganis > Malygos > Leeroy and forget the rest. If you are Johnny and want to do cool things, Malygos > Sneed's Old Shredder > Nexus Champion Saraad/Blingtron. If you are Timmy, and just want the amaze everyone, Deathwing > Everything else.

Lol. I probably am stuck between Spike and Johny. Your order makes a lot of sense to me actually, I was already thinking of Mal'Ganis or Malygos, with some love for Sneeds too. Probably hoping someone convinces me of one side, hehehe.
I just did a big Inventory. I also have a 1600 problem, in two ways. I have 1600 gold to spend on packs, and 1800 dust to make a dude. You think it's better to make a Legendary or spread the love to four Epics?
These are the uncollected Legendaries I have ranked 100: Aviana, Rhonin, Archmage Antonidas, Tirion Fordring, Confessor Paletress, Prophet Velen, Al-Akir The Windlord, Mal'Ganis, Lord Jaraxxus, Varian Wrynn, Bloodmage Thalnos, Ragnaros the Firelord, Alexstrasza, Malygos, Sneed's Old Shreeder, Eydis Darkbane, Nexus Champion Saraad.
I am a Timmy, through and through. I'll play anything on the Ladder, except for Face Hunter, and I get bored fast. I bounce from Midrange Beast hunter to Danksteed to Dragon Priest now. But I dabble with a Cutpurse Rogue, a Dragon Mage, and Reincarnate Shaman.
My spreadsheet says I should get Classic packs, but only favors them by 2% for expected dust and 7% for new cards over TGT.

Do you have at least one quartermaster? Because tirion is soooo strong, I didn't really like paladin until I crafted him and one quartermaster to play midrange paladin. That was before murloc knight, which only makes things more fun.
If you got the giants, jaraxxus is also a lot of fun. I'm not the greatest fan of mage, but antonidas is also cool... I have trouble getting a lot of value from him, but again I'm not great with mage.
The other ones doesn't feel as important, I mean... alex if you have Control Warrior in sight.
You said you get bored fast, so I'd say you make 4 epics, as it will give you more flexibility when building new decks.
Good point. I went with Mysterious Challenger (have 0), Lightbomb (have 1) and Gorehowl (have 0). That opens up two new decks and makes my Priests decks better in the meta. Eyeballing Quartermaster(s), Molten Giant(s), Ancient(s), a second Dreadsteed, &c. I'll buy another 5 Classic packs too, see if I get lucky.

New legendary time! I would like advice on legendaries that will entertain me... you know, play new decks and keep it fresh.
The ones I'm missing and want/ have a slight interest/ wouldn't mind having (not in any specific order):
1. Mal'Ganis
2. Blingtron
3. Leeroy
4. Nexus Champion Saraad
5. Cairne
6. Sneeds
7. Malygos
8. Deathwing
I generally open classic packs, so probably craft from non-classic (?)
Btw I have all the remaining tier 1 and 2 legendaries.

Mal'Ganis, you'll be opening Classic packs for Malygos, Sneeds, Leeroy, Deathwing, (Cairne)...
Mal'Ganis gives you more viable options, even though Malygos is OTK [Insert class here].
I like your wishlist, but I don't think I'd include Cairne in mine ><
