Yeah, effects that does not specify a target, either by being random or by being AoE, can hit things even if they are stealthed. This includes the Knife Jugglers effect.
As for proof, the only scenario I know of is from the lastest Hearthstone were they tried to use Mad Bomber to get rid of the Worgen Infiltrator. While it did fail to hit the target. They acted like it would hit it which should be proof enough. The scenario happened at 4.46 http://youtu.be/qF6Wbrat-xE?t=4m46s
I could understand if it was a aoe but i dont think it should hit stealthed units.
To apply some logic (even if it's not necessarily relevant), if you're just throwing knives around, technically you could hit someone even if you didn't see them there. You'd just have to be really lucky :P

If i have knife juggler and summon a creature, does it the damage effect stealth minion as well?
Yes. "A random minion" can affect stealthed minions.
