Finally saved up 1600 dust, and looking for advice on what to craft.
My collection is pretty lean as I'm new to the game. My Boomsday collection is somewhat healthy but outside of that I'm still starting the grind.
Atm maining Paladin but open to switching. Running a budget mech paladin atm.
Baku Mooneater perhaps? I'd have to change my deck around a fair bit then as I have a heap of even cards. Or would I maybe be better off crafting 4 big epics?
My first craft was Sunkeeper Tarim.. no regrets. If you like Paladin maybe Kangor's or Zillax?
Baku is a safe craft and is used in a number of decks. Epics are usually a good craft if you know what kind of deck you will be using. But not as sexy as that first legend.
What I would suggest is to look up a solid tier 1 or 2 deck that you think you'd enjoy playing and start crafting the cards that get you closer to completing it. The more affordable the deck, the better but make sure it's a deck that you'll actually enjoy playing.
There's several paladin decks that you can work towards that are very competitive so you may want to look into some of those that fit your play-style.
Other than that, I'd recommend your general safe crafts that will always be good from the classic set. IE: Tirion Fordring is pretty much always a safe craft. Though I would recommend working towards a solid Tier 1 or 2 deck first.
I think my first craft waayyy back in the day was Leeroy Jenkins. He's a solid finisher in a very large number of decks (I always played tempo rogue back in the day).
Since you're playing a budget mech paladin, Zilliax is a very good value card that will fit in any mech deck that emerges in the next two years.
Sunkeeper Tarim is also a very good paladin card, arguably the best one they have. Of course, he will only be available for another 8 months or whatever, but 8 months is technically still a long time.

You've scored some good advice already. My first craft was Baku, and I'd recommend him to you. Odd Pally and Rogue will open up to you. Even if you don't have all the tier1 cards, you can build something decent. It also opens up a lot of deck building options if you want to muck around with other classes, though none as good as Pally or Rogue.

Genn was next. Less options, but still had fun with it.
After preordering Boomsday, I crafted Ragnoros and Malygos with my dust. Good cards, but wouldn't recommend those as strongly (I wanted to build wild big priest).
Next was DK Jaina, as I thought I made a decent Boomsday mage deck. Sadly, it wasn't ranked good, even with DK.
Other good first crafts could be the DK for your favourite class, or, as many have said, Whizbang. I wish I had Whiz when I started, however, he doesn't allow you to build up a deck as you improve/collect cards.
Zilliax is great for todays mech decks and its a neutral minion. Whatever you craft just try to craft a neutral one. Because your are currently new to the game and you may not have fun with tarim, tirion etc. But whizbang, zilliax and baku can give you more classes to play.
My first legendary that I crafted was Yogg-Saron, Hope's End. It was a amazing meme/win condition card back then. :(
I crafted a golden Whizbang (not my first craft but my first golden craft). I couldn't be happier. So much fun in one card! I am more of a casual player who has been around since beta so Whizbang fits me. Definitely not for everyone.
depends to be honest, the best overall legendary AT THIS MOMENT is Baku because you can make baku rogue/baku paladin which are high tier decks IF you are looking to make it to a high tier and not having alot of fun. Whizbang The Wonderful has been concidered the best choice for F2P Players just because it gives you 18 decks, most of them are okay. 2 are bad and there some good ones like big spell mage, aggro spell mage, zoolock, mech paladin. Otherwise if those 2 don't sound that fun to you, you should just look at yourself and pick your 2 most favorite classes to play. Look up either a high tier deck or a meme deck and make a important piece of the deck. Like dont craft subject 9 because it is only seen in 1 spell hunter deck, not even in all of them. I would say craft zilliax but that card just feels okay. It doesnt make you feel like you are playing a legendary. My favorite legendary is and always will be '' cairne bloodhoof ''.
If you want to play for a long time and learn to build decks, the classic neutral legendaries are definitely the most value. Leeroy Jenkins, blood mage thalnos, alexastraza, ysera, malygos are all great. Classic set class legendaries are also great, especially if you have a class you like to focus on.
As for the standard sets, baku and genn have better value than anything else out there. I wouldn't spend my dust on any legendary from last year.

Pretty safe crafts will be Baku the Mooneater and Genn Greymane as both of them enable entire architypes just by themselfs. However I will give my own experience with the two. Baku is really strong, but the decks she supports are extremely one dimentional, they're all aggro decks or just crap otherwise, the decks Genn supports I find a lot more fun, because being able to use your hero power every turn without gimping yourself feels great, again only decks that really support it are Paladin and Shaman, the others require a bit more support.
So if you really love Paladin, then going either Genn or Baku is a pretty solid pick as Paladin has really strong decks that are supported by both of them.
Otherwise I could always suggest Leeroy Jenkins as its a stable in aggro/ combo decks, Bloodmage Thalnos is also a pretty solid card albeit a bit boring. I would suggest that you stop and really think if it's worth it to craft any legendaries from the Year of the Mamoth as they're only around for about 7 months (still a long time and worth it if you plan on playing a couple of hours every day).
You might consider Zilliax and Kangor's Infinite Army for mech Paladin, because together they can provide a crucial game swing for comeback potential. Sunkeeper Tarim, Val'anyr, and Crystalsmith Kangor are decent additions, but Sunkeeper Tarim is possibly the most versatile card overall.
Lich King was tempting, whenever he is played against me I lose shortly thereafter.
Came down to Baku or Zilliax for me.
In the end I went with Zilliax, with Baku next on my list.
Found a tier 1 Odd Paladin Mech deck that used both Zilliax and Baku. So I'm going to work towards that. But I'm ages off it atm, and Zilliax was going to give me the best short term boost in the meantime.

First of all choose a class (if you like competitive play Paladin is very good atm).
Then craft staple legendaries for that class, such as Baku or Sunkeeper Tarim. Zilliax is not a staple legendary (not yet).
Baku is a nice safe craft, i suggest finding a cheap meta deck you like and build towards it.
Paladin only:
Sunkeeper Tarim - arguably the best Paladin Legendary if not one of the best Legendaries overall - downside - it will rotate out in about 6 months.
Tirion Fordring - Very strong card in slower decks - was once considered the best legendary in the game alonside Sylvanas Windrunner and Ragnaros the Firelord - both rotated to HoF.
Neutral:
Baku the Mooneater - Strong versatile neutral card
Genn Greymane - same as above.
