I guess the damage calculation is as simple as "deal the minion's health to kill the minion (in this case, -1), and deal 6-that amount to face (6-(-1)=7). I guess it makes sense, but it seems a little shoddy to me.

Correct. They should add a CEILING() to the script to limit it to 6 (plus spell power).
