GvG had a lot of mechs and mech synergy because it fitted the theme of the expansion. Obviously there have not been many new mechs added since GvG rotated out of standard but you'd have to ask a member of Team 5 to find out why.
I think its just that they want to keep the game fresh and add in new types of cards like elementals. When you think about it you could re-skin the entire journey to ungoro expansion and change every card to be like those GvG. e.g Crackling Razormaw Could be a mech, the adapt mechanic could be renamed "upgrade" and the adapts could be changed to be like stronger versions of spare parts. Knowing this I think they just prefer not to tread on ground ground to much.
The thing is that after blackrock rotated out they have kept adding dragons into the meta and now is a viable deck. The difference with mechs however is that there are not strong mech cards in the classic set upon which to build the archetype. If there were mech versions of cards like Deathwing and Ysera in the classic set team 5 could revive the archetype. Because these cards don't exist it would take a lot of cards and team 5 would have to make the expansion somehow connected to mechs when they'd rather do something new.
I think they will address mechs again and will accompany it with a new keyword that gives them a more focused and tighter theme. At that time they will change a lot of the existing mechs in a similar fashion to how they added elemental tags to existing minions.
