Normally, I have a general outlook on what cards I want to craft/leave alone. This expansion I'm sort of stumped even now.
To note, I'm more casual than competitive. Decks that just win don't interest me. Neither do decks that just fail. I prefer question marks: decks that MAY work but we aren't sure. On the MTG scale I guess I'm more Johnny than Spike though I have no problems netdecking if the deck is interesting. For Un'goro I gladly crafted Paladin and Druid's quests and don't regret it (I DO regret crafting Warlock's but I had a feeling I was screwing myself over :P). That may get you an idea of what I tend to aim for in crafting.
DK wise, I already have Jaina, Guldan, and Malf's cards. I have enough dust to craft 2 legendaries though I could probably make another if I start actually dusting worthless items from my old wild collection (I still have majordomo for example). But which ones?
Priest I know is the autopick normally, but I'm NOT going to craft Raza at this point and not really sure I'd get much out of him otherwise.
Paladin seems...meh. OTK seems boring even if it works and he doesn't seem to help out in other decks.
Rogue is VERY interesting but I literally only have Poison Mind for Rogue legendary cards.. that's counting Wild. Not sure I could make one work without a lot more investment.
So Im thinking it might be Warrior, Shaman, and/or Hunter, especially since I have decks that ONLY need their DK to complete.
Warrior seems..weak. I see him put into control and fatigue decks but is he even needed there?
Hunter looks fun but well.. it's hunter. Not that effective and even when losing to them I see them play the DK then never getting to play the beasts: either they win or lose at that point.
Shaman seems to be the most viable pick as the evolve deck currently seems interesting now that it's no longer "hope for dopple+evolve".
Again I can make 2 for sure and if a third or forth seem VERY intresting I could probably pull dust to make those if I must. But not sure what to go for. So suggestions?
Though you said you were hesitant to craft Raza, I'm not quite sure what you meant by ''I'm not going to get much out of him either''. Going by what you wrote, I would probably go for either Hunter or Priest's DKs. Hunter is a lot of fun and there are those long games where you do get to play your custom beasts, albeit rare. Raza, while rotating soon-ish, is definitely worth it seeing as the deck just does not function without him as well.
The only thing that may not be as fun is that the whole plan revolves around actually DRAWING both Raza and the Dk, thus you need to focus on a cycle version rather than a heavy build with n'zoth and so on.
Priest is quite fun contrary to popular belief. People just don't like losing to oppressive mechanics, thus, it's been getting some hate and I'm sure the trend will continue post the nerfs. Those are my picks, going by what you wrote. Hunter and Priest. Consider Warrior as well but it really is not that decent or interesting for that matter. There are decent decks with it though, both fatigue and tempo builds have been using it with a decent amount of success.
Hunter DK can be very fun, but you are right that it is tough to win with. But, I've found that I can try to make any type of hunter deck and always be able to throw in the DK due to its cost (besides 2 savannah highmanes, this is your 3rd 6-drop) and it's ability to generate cards (one of the major drawbacks of the hunter class).
Shaman DK is also fun, but more gimicky, as you will occassionally get some bad evolutions. But it is also a pretty powerful card and with Shaman's ability to flood the board, it results in some big boards usually.
So, if you want to win more, I'd recommend Shaman DK. If you want to have more controlled fun, I'd craft the Hunter DK.

I highly recommend rogue if you're just looking for fun. Legendaries are not really vital but make sure you have vilespine slayers
Shaman seems fun on the surface but I got tired of it fast. The standard token + bloodlust lists don't really get much mileage out of the hero as they run out of steam quick and have really linear gameplay. The more control lists build around the hero are very frustrating to play when you don't draw you hero

Warrior is not necessary for control lists, in fact your armor up hero power is preferable for those builds. If you see the hero being played in a control list, it's probably because the creator is a streamer who wanted fresh cards to entertain their viewers
Hunter is just bad. Use this site's zombeast generator to if you want to entertain yourself with him ;)
Paladin is a fine card and viable in all control paladin as well as OTK. The Death Knight OTK plays out just the same as all the other OTK paladins throughout HS's history so it's not that interesting

Priest: what I meant by that odd statement was that raza was going to go away next year so I didn't really want to craft him. Meanwhile, priest dk didn't seem useful past the Highlander deck. Given the responses, he's out.
Warrior also sounds out as I probably don't need him.
Hunter.. Yeah, sounds too gimmicky to make really work right now.
The idea of crafting rogue and edwin is interesting as I've been stumped so often in rogue decks do to never having him. It's a good long term strat as eddy is classic.
Shaman might have a long term problem similar to priest as many of the critical cards go away next year gutting the deck.
So yeah, I'm thinking rogue dk and finally getting edwin. Even if val dk fails, I'll have the core items for future decks.

I've had fun with Shaman DK. It's not the most competitive card, but it's neat for two things:
The double-evolve really changes your board.
The HP can be a heal, can boost something with a good battlecry but poor stats into something better.
