In an open board, trade with sylv vs sylv is most of the time the best play unless you are able to kill your sylv. In a board choke with minions other than the sylvs, it gets more complicated depending on the cards in your hand and minions in play.
I guess it really depends on the context of the game + what is on the board. I would say, if there is another minion you could take out and kill your own Sylvanas in the process, you'd have a chance of grabbing the enemy Sylvanas.
don't forget soemthign key - the one who played sylvanas first his deathrattle will trigger first. so if your opponent has, say, a shade on board, and you trade with sylvanas, you will steal his shade, thenn he'll steal it back again. always kep in mind that sequence. same wqith belcher - if you played your belcher after his sylvanas, it might be ok to trade with it as your slime will spawn after sylvanas attempts to steal something.

In order of play. Who attacks first is irrelevant.
As to the video, it might have been "filmed" before that was a rule. There was a time when the order of deathrattle ( And most other stuff ) was extremely obscure and mostly random ; And it made playing around it extremely difficult, hence why the in-order-of-play was established.

What is the best play when you play sylvanas and then your opponent play sylvanas? and vice-versa. So confused when that situation happens :s

If his board is empty otherwise, killing off your own sylvanas (with a fireball or something) in order to take his is a decent play.

that is the most ankward situation for me :/ i feel like i always make the bad play
