Coin doesn't give a mana crystral, it just gives you an extra mana for that turn. Your mana says 3/2 if you coin on turn 2 for 3 mana available out of 2 mana crystals.
If you use felguard on turn 2 with the coin it will destroy one of your actual earned mana crystals leaving your total at 2 at the start of your next turn.

What you are suggesting, though, is something that would make The Coin+Felguard a poorly balanced combination. It's certainly not something the game needs, when there have already been some issues in terms of balancing the coin with certain other mechanics.
The balance of Felguard is that it is a low cost minion, with reasonable attack and most importantly health that exceeds the typical blanket removal threshold (5+ health). The price you pay is really just akin to the shaman mechanic "Overload". Making a 0 cost coin negate the effect of the card, would be devastating in terms of enhancing the already powerful state of Warlock Aggro.
5 health is nothing to joke at, it's well beyond the threshold of many situations such as Shadowbolt, Frostbolt + Ping, Spell Damage + Wrath, Spell Damage + Lightning Bolt, Backstab + Ping, Evis. Think of all the times a Sen'Jin has gave you trouble, and imagine that a turn earlier. This is the plus side to losing a mana crystal permanently, where the Warlock may push for complete control early on with his cheap early game. Even if you do play this out turn 3, you have enough for a Shadow Bolt turn 4.
Granted, situations where you eat a Fireball or Polymorph are still possible and will set you back far, but that's a risk most Warlocks have to face in terms of playing their cards with bigger drawbacks.
