If you do intend to craft a golden N'Zoth( which I did myself), there's not a single reason not to play the New N'Zoth Healadin which is arguably one of the best deck in the new season.
In that case you really should craft
Paladin: 2x Forbidden Healing, 2x Lay on Hands, Ragnaros Lightlord and Tirion
Which will cost= 400*(2+2)+1600*2=4800, + the Golden N'Zoth and you've still got 1500 left, which should let you very quickly craft another legendary, and ideally Cairne Bloodhof to complete the collection.
Golden N'Zoth does revive golden minions and thus you can also get the maximum aesthetic value out of it
The rule of thumb since the introduction of Standard/Wild format is, always prioritise crafting classic cards.
I always go this route: I pick a deck it seems I would enjoy playing (if I want to focus on fun aspect) or competetive (if I want to focus on competetive side) and I craft all missing cards form that deck. I try to combine both fun and competetiveness of the deck as much as possible.
But I need cards to actually play them, you seem to be rather a collector, willing more to "have" cards than use them in play (maybe I'm wrong, but this is my first impression of your post). So if I were you, I would craft classic legendaries (probably never to rotate out of standard), those that are the most useful, in case you would want to play them - Tirion, Jaraxxus, Alexstraza and Ysera. Don't disenchant your golden legendaries - Malygos and N'Zoth, they are good enough to be played (if you ever will be willing to) and look amazing.
One does not simply miss the chance to craft golden legendaries! When the expansion was launched I crafted 3 old gods in gold and Healzin (Can't remember name, but the shaman legendary) - Also got the new deathwing in golden
Hello now i have 9500dust and in my collection still missing few playable card. So what you should craft from that.
Missing Cards:
Druid: Fandral Staghelm, 2x Ancient of war
Hunter: Princess Huhuran, 2x call of wild
Mage: 2x arcane blast, 2x ice block,
Paladin: 2x Forbidden Healing, 2x Lay on Hands, Ragnaros Lightlord and Tirion
Priest: Prophet Velen,
Rogue: Edwin Vancleef, 2x Shadowcaster, 2x Blade of Cthun,
Shaman: 1x Eternal Sentinel,
Warlock: Lord Jaraxxus
Warrior: 2x Shield Slam, Varian Wrynn
Neutral: 1x Doomsayer, Gormok the Impaler, Leeroy, Cairne Bloodhof, Baron Gedeon, Alexstraza, Ysera, Deadwing (classic).
That all:) i can also diss Golden Malygos and Golden Nzoth if it will be necessary.

Neutral: 1x Doomsayer > Alexstraza (for mage and warrior) > Cairne Bloodhof (Nzoth decks) > Ysera (Priest)
I think that you should craft the next list:
2x lay on hands (800)
Gormok (1600)
Leeroy (1600)
2x Ice block (800)
Doomsayer (400)
Alex (1600)
Eternal sentinel (400)
Edwin (1600)
2x Shield slam (800)
You need 100 more dust for it, but you get freeze mage, zoo, some shaman deck, some paladin deck and some rogue deck and a good epic for warrior deck
EDIT: I don't see that you miss Tirion, you should replace Edwin with a Tirion in the list :P

-Start with neutral cards in order to maximize the number of classes able to play the said card.
-Next is class defining cards , first come to mind is Tyrion Fordring
-Craft the highest priority cards first - Those low priority cards like Prophet Velen , Varian Wrynn no need to be crafted

I allready have golden Nzoth:) dropped mi from the first 50 packs of expansion:)
Now i count my golds if i dissenchant all i can get aroud 4000 more dusts:)
