Hello, I'm having some success and a lot of fun with this deck so thought I'd share. A few notes of some of the cards:

Carrion Studies - For early game plays, unless I get something that's fantastic, I often use this to discount the deathrattle cards already included in the deck. For example, a turn 4 Teacher's Pet or a turn 3 Mok'Nathal Lion. Besides that, card generation helps the Quest, and there are a few deathrattle minions that generate tokens as well.

Loot Hoarder - Card draw is nice, however, this is mostly in here to give Vectus another deathrattle play if drawn early. Also, possible mid-game synergies with Mok'Nathal Lion. I had Bloodmage Thalnos in here instead, but he's kinda pointless without any need for spell damage.

Bloated Python - This originally wasn't included, however, I found that Mok'Nathal Lion really needed additional, lesser-costing deathrattles to play off of. I had Desert Spear in its place, which is nice for the quest and gets lots of value, but doesn't fit in as well as the Lion.

Mok'Nathal Lion - I'm really liking how this fits. Playing Gryphon on turn 3 into this guy feels great when you can get a deathrattle minion to stick. Turn 7 Gryphon into Lion feels good and clears most things.

Rustworm Cultist - He helps the Quest but is also useful in the late game when even 1/1's are a threat if not dealt with. And that's really the beauty of Quest Hunter. Every minion has to be dealt with, which tends to overwhelm your opponent or they run out of resources.

Difficult Matchups: On matchups with big minions that come into play before you can finish the quest, you have to use Veranus (double entendre) wisely. Keep this in mind against Druid and Priest. If Veranus isn't showing up, look for a combo with Swarm of Locust + Quest completion for large minion removal.
