Welcome to my glorious guide where I educate you on the ways of the I DON'T LIKE SECRET/QUEST MAGE Mage deck.
True men (or women) of nature know; we don't conform to the plain and simple decks of the meta just because they're strong. Us men (or women) play for the grace of war, the feeling of combat, the intense clashes on the battlegrounds. We play for the glorious feel of enjoyment.
This expansion has made it both possible for us, enabling us to both enjoy the spoils of victory while providing refreshing and unique gameplay. Yes, ladies and gentleman, I have come to present to you what you didn't know you needed; this majestic deck.

NO luna's ...any replacement?
You could replace it with another big spell like Deep Freeze or Firelands Portal and the deck would probably still be playable but in a bit of a worse state.
Thoughts on Potion of Illusion and Doomsayer? (Especially since Tortollan Illusion shenanigans seem to be the rage these days, plus Zoolock giants happen to be above Depth Charge’s AOE range)
I did try Doomsayer and would say you could replace Depth Charge for it if you want to but keep in mind that although Depth Charge is a bit weaker it costs 1 mana less, which could make the difference in heavy aggro match-ups and makes it a bit easier to combo with stuff like Frost Nova
I also tried Potion of Illusion and although it's a very good card I found it being a bit too slow sometimes and I focused more on the early game portion of the deck. I must say, it might still be a very good pick for this deck with proper adjustments.
You bring up some good points; perhaps Frost Lich Jaina might make Potion of Illusion more appealing? (with all those spare 1/1's to fuel the hero power)
Possibly although that'd make the deck far more late game oriented, meaning that it'll be more difficult to play against aggro.
I'd say try it out and experiment with it, that's how I improve my decks too.
