This is a more-or-less easy to get (one notable exception, see below) variant of the quest/control/rez priest deck that people are starting to run as an anti-demon hunter special.  I got rid of one Plague of Death and one Mass Resurrection - they are just too slow against DH and the Shadow Words are far more useful in the first 8 turns - and dropped the expensive Reliquary since DH ignores taunt anyway.

Interestingly, this has a lot of sticking power against other decks as well.  Whether you are fatiguing out armour warrior or blasting waves of AOE doom against token decks, it's versatile enough to deal with most match-ups right now.  Who knew?

The only caveat here is that you must have the Soul Mirror.  Period.  Sorry.  You can find replacements for Skeletal Dragon and Catrina Muerte if you are really on a budget - Archmage Vargoth could be fun, a second Shadow Word: Ruin has obvious utility, and anything that generates cards into your hand or deck for fatigue matches (hello, Ysera!)  would be great - but the Mirror is a must.  Play it right and it takes the place of either the plague or the rez or even both.

Mullgan:  You want cheap removal in your hand at the start.  2-mana Shadow Words, Penance for goosing the quest,  and Breath of the Infinite are going to keep you in one piece while the DH burns out all of his early juice. Holy Nova is tempting, but you want to hold it back.  Nova into Mirror on the next turn can swing the entire game so be judicious there.

After that, just manage the board as best you can for the first 5 or 6 turns, keep goosing the quest, and then start to build control and your rez pool while demon man runs out of steam.  It's a fun deck to play, it's got a bit of discover and RNG dragon fun for variety, and it makes Demon Hunters feel bad.  So, win win win.
