Play with your opponent's deck.
This deck is very fun, and you can survive healing with your hero power until late turns.
You can clean the boards with holy novas and psychscreams and steal minions from the board.
Save Chameleos for steal questions completes of your opponent or some other value card.
Games:
Warlock- 5-2
Paladin- 4-3
Priest- 2-3

I had originally written a long paragraph of strong criticisms toward this deck, but, the more I look at it, the more I realize that you're not too far off from achieving something interesting here. However, please realize that this deck is still rather inconsistent, as it relies too heavily on the steal cards, in effect; sacrificing board control in favour of the hope of stealing a win-condition. For example, while you're busy playing Devour Mind on turn 5, your opponent has just finished filling the board with minions; what's your answer? I believe that with a couple tweaks, this deck can become extremely effective.
Most steal priests I've seen do not rely too heavily on their stealing cards, rather; the stealing cards simply help to amplify their win-condition that they have already placed into their deck. Unfortunately, I do not see any reliable win-conditions in your deck. I'd recommend removing 2x Psionic Probe, 1x Devour Mind, 1x Psychic Scream, 1x Gluttonous Ooze, and 1x Baku the Mooneater, and, as a start, add 2x Holy Water and maybe even King Togwaggle. However, these are only my suggestions, and you can do as you wish with your deck.

You are rigth, its very inconsistent yet. RNG can be very unfavorable sometimes. The most of decks in the ladder have sinergie cards making the things hard. There is no one settled win condition to turn the matchs more exciting =)
But realize too, this deck can be very good against control matchups, stealing DK's and control cards. I think remove Gluttonous Ooze is a little risked in this meta full of weapons. Maybe remove 1x Psionic Probe and add Holy Water be useful.
I dont know about remove Baku the Mooneater... I like the idea of improvement heal to survive and take more resources of my opponent.

I dont see win conditions here. Play your opponent's deck faster than he doing same? With same result you can just make taunt/heal deck with Benedictus.
There are many differences that can give you advantage:
You have a better hero power to sustain (better than guldan, 'cause 4 heal) and to survive agro match ups (no need taunts to this).
Your board control is fine with spells. Psychscream destroy most of match ups, for example. And with early minions, like curious, cleric, etc.
Your draw is really good, because so many cards provide value...
Of course, you need some luck to dont take sinergie cards, like Level Up! or Dark Pact.
And dont forget the most important: FUN =)

.... Possible replacements for Azalina and Benedictus? :D
You can possible replacement with 1 Holy Water (keep stealing,) and +1 Unidentified Elixir can help in early game.
