Mulligan Guide: It's not real important what cards you start with for the encounter with Sindragosa, but it's best if you don't keep more than 1 spell. It's not uncommon for Sindragosa to start the game with Unchained Magic, and even use The Coin to play a second one. She can always, rather unfairly, see when you have any spells in your hand and will punish you if you hold onto them.
Ideally, you want to push Sindragosa into her different phases when you have nothing on the board, but it honestly shouldn't matter. You have 3 open spots and the majority of your minions have Charge. If you can make a trade, leaving your board empty, then use your Weapon to push her to the next phase, that is the preferred way to do it.
Your priority is to go face and ignore her minions most of the time. Her Twilight Guardian and Chillmaw can put a kink in your plans, so they must be dealt with. Hopefully, you're able to deal enough damage to her to finish her off before you even have a chance to worry about Chillmaw, but you should be prepared, just in case.
Once she hits Phase 3 it's really going to be a race to the finish. This is where Mortal Strike really shines. At this point, you need to be able to finish her in another turn or two, because you won't survive for long.
You could add more weapons, if you like, but you shouldn't need to switch anything out. If you want to try some different tactics, rather than going face, you can take a look at these other decks below.

I'd use yours, but I need to craft old cards for it and I'd prefer to use this as only needed to craft that 1 wild card, and I like playing as rogue.
I had been trading away her minions all the time though like I usually do with rogue, then trying to burst down face when none of mine could be turned to ice. maybe I was taking too long about it and just try to murder her faster.

You can definitely try your own decks, but you will want to have as many Charge minions as possible, so at least be sure to add Wolfrider. You'll probably also want some extra damage to help you out, so I'd put in Eviscerate too. You really only want to trade with minions when you are about to push her to the next phase so you don't clog up your board with frozen slots. Otherwise, you should definitely be all about going for face damage. Good luck!
