Yes, all adaptations are different, and to expect an old mechanic to not adapt to a future mechanic is maladaptive. 
Enhanco Mechano was doing it before Adapt was a thing. And "adapt twice" would imply adapt choices

They do not stack, same as 2x Barnes work same as 1x.

Is it only me or the artwork of this elemental was carbon copied from the Djinni of Zephyrs?

This card is insane though, I can't wait to play it in my Shudderwock/Elemental shaman

The relation is actually backwards. Djinni of Zephyrs, like many early cards, reused artwork from the WoW TCG, and that particular piece of art was based on Siamat's WoW model. When Siamat himself was added to Hearthstone, they commissioned new art of him.
