Because it doesn't naturally have Taunt. "Choose One" effects are similar to Battlecries. If someone Dirty Rat's your Ancient of War, it doesn't come out with Taunt on it. Therefore, it isn't a "taunt" minion, since it doesnt inherently have Taunt.
Depends on your opponent, but usually the turn before you win. I usually use it when I put out a lot of jades and I'm in fear of a board wipe like Twisting Nether, Consecration + Equality, etc.
He insures that you can dump all the Jades you want on the board without fear of a board wipe.
I took Dr. Boom out of this and I think it's a little better that way. Every time I have the mana to play Dr. Boom, I usually want to play something else instead. I added a second Wild Growth to make my early game more consistent, but I could also see replacing it for a second Nourish. Just my thoughts.
Great deck though. I went on a 13-2 run to get from rank 9 to 5.
That really depends on what you already have. Shadowreaper Anduin is my favorite so far (I have 4) but I wouldn't recommend him if you don't have Kazakus or Raza the Chained.
Likewise, Uther of the Ebon Blade is good, but if you don't own Tirion Fordring or other strong Paladin legendaries, you won't have much of a place to put him.
If you want to know which one is fun regardless of what else you have, I'd say Valeera the Hollow
I would wait to see which ones are good in decks that you already have the other parts for. I know it sucks to wait, I'm already itching to craft more
None of the class legendary minions in this set had anything to do with their respective class deathknights. If anything, you should have expected DK Uther to NOT be about divine shield.
Are there any plans to add additional formats like Pauper (commons only decks)?
Also, I always thought it would be cool to have a Quest or Legendary minion that encouraged the theme of playing minions with no text and no abilities (i.e. Chillwind Yeti). Is this a possibility in the future, or in your opinion, is there no place for that in Hearthstone?

It is just spells, not minions.

But Jaraxxus can be put onto the battlefield in a number of ways, a hero card cannot enter the battlefield as a minion. I disagree with that point.
