Tarim will get you some massive swing turns and Val'anyr is extremely powerful, especially on a charger, though in this type of deck you want to drop minions as soon as you get them.
In short, I'd craft both but if you can only afford one, get Tarim.
It's not needed. Defender of Argus is better in a slower meta of tempo and control decks. Since two of the top tier decks are both aggro, it doesn't serve much purpose, so we go for the cheaper option of Sunfury Protector.
Kazakus is hard to replace as his effect is so unique. You could try throwing in Defender of Argus instead. He's a solid 4-drop that will get some use in the deck.

It's good against the current meta. Maybe not so much against the meta from last year. Once you get to rank 15, you'll start facing regular players.

I haven't played with Acherus though the Jailor is great. It has amazing synergy with Knife Juggler or just to get extra bodies on the board.

Ragnaros the Firelord is not a very good replacement for Lord Jaraxxus. I can see him potentially being a replacement for Sylvanas Windrunner however.

More Spirit Claws than Doomhammer. Haven't seen a Doomhammer in at least a week.

Yup. Unless the boss has hard removal, he won't attack for the rest of the game. Same goes for just about every other boss.
