Oil Rogue, Handlock, Grinder Mage, High curve Demonlock, Ramp Druid with heavy taunts and Control Warrior if you play correctly.
Some people are saying Shaman but I think that match-up is heavily Patron Warrior favored if both sides play correctly. It's not a match-up won by Grim Patron but by charging Frothing Berserker. Shaman have to make totems ... so charging Frothing Berserker with 1 or 2 Whirlwind effects can often OTK the Shaman.
Idk, you say Grim Patron is unbalanced but...there are tournaments where grim patrons didn't win....if you actually play ladder...right now, there are more warlocks and hunters than grim patron, and...there are plenty of pros that aren't playing it....if it's so unbalanced...how do you explain all that?

This is the deck I was using when I got legend during the season TGT came out. I was rank 4 when I started with it and was 31-11 when I got legend.
I don't think most people believe GP itself is OP, however in conjunction with Frothing it is. It enables too large of a number of damageable minions without any interaction from opponent. Same as buzzard nerf or miracle. Buzzard itself wasn't OP but in combo with UTH it was. Personally I believe the smart move would be to nerf Frothing or Warsong, but we shall see.
I must just be doing it wrong as handlock because I'm running double hellfire, have even teched in a Harrison and ooze to get rid of weapons and still have a losing record to these guys. I've been burst down for like 30 with a double frothing / warsong / deaths bite combo. I run up to rank 5 then have these guys smash me down to 8 real quick.
The demonlock I'm using is handling them pretty well, so long as I get a decent lead, and push them into desperation mode before later turns. Just beat 2 in a row right now.
Handlock with Hellfire and Shadowflame works wonders, Priest with double Lightbomb and Velen's Chosen + Holy Nova is also pretty good, and Control Warrior has Brawl and all their other Control shenanigans to win. Oil Rogue has Blade Flurry and Taunt Druid can stop the Patrons pretty quickly, provided the Warrior isn't running Commanding Shout.
If you want to stick with Mage, then perhaps run one Flamestrike if you're playing Tempo Mage. Most Freeze Mages already run one Flamestrike, but if you're facing a lot of Patron Warriors, you can run a second copy. Personally, I love having a second copy and can't imagine why nobody runs two of them.

just lost to i have lost count patron warr so i came here to complain , not necesarry the patron kills you but the frothing berserker. i did not know how to counter them too , il give shamy a try but i play / like only mech shamy and it does not run any kind of aoe

If you managed to get past turn 7 vs patron warrior all that's left are prayers. Aside from few specific decks (ice block or tripple taunted giants handlock, 40 armor warrior) you're most likely out.

Giant/Freeze mage.
Basicly you need to have Ice Block up, another ice block on the hand and your own finisher on the hand aswell.
on the Giants mage case you end up with a bunch of 8/8 taunts and the warrior cant get past that unless he brawls which is why you should keep some giants on your hand.

Not an easy question to answer, it entirely depends on your deck.
Some classes try to rush the Patron, since even a Patron can have a terrible opening hand (who would have thought?), while Control Warriors can actually amass so much armor that even a double Frothing won't kill them (unless they overextend, which they obviously won't if they are good).
But the very basic answer is: minions with taunt and an attack value of 3 or more, preferably with 6+ health. The newly introduced Twilight Guardian is a true nightmare to deal with, since it doesn't die to the last charge of Death's Bite and trades with both Patrons and Frothings. Sludge Belcher is actually a liability since it does die to Death's Bite and even fuels Patrons with the spawned 1/2. But in the end it just isn't that simple. Even a buffed up taunt minion can be easily dispatched my a zero mana Execute, making way for the OTK.
Which leads to the main point: it doesn't really matter what you have on the board on turn 8-9, it matters what you had down on turn 1-7.
You want to drain the patrons resources throughout the game through pressure. Force him to use his Death's Bite charges, deny card draw by killing his damaged minions, get rid of the Acolyte through silence, force him to use his premium removal on targets that aren't a top tier threats (think Twilight Drake instead of your taunted Mountain Giant coming up next etc.). Don't let him do as he pleases, you know what is coming your way sooner or later.
Of course it would be helpful to know your class, but that's the very basic line of thinking. Depending on your deck your overall gameplan might change drastically.

Am I playing the same game as you people because in 50 games I think I've seen MAYBE 1 patron. And since patron warrior existed I got one turn killed 2 or 3 times. Of course it sucks when it happens but they're so rare for me..

Typically Handlock, Flamestrike Mage, Control Priest, Ramp Driuid and Shaman are pretty good at shutting down Patron Warrior.

Play Druid
Play Poison Seeds
Play Starfall and select "Do 2 damage to all enemy minions"
Repeat if the Warrior hadn't played both Grim Patrons by this point.
Grim Patron is too meta defining. It causes all decks to either tech against it, or be aggro (Probaply why TGT didn't change the meta)
There needs to be a deck that Patron Warrior has to Tech so much against, that it becomes weak to other decks.
