I'm pretty burnt on all the meta decks right now. What are some fun, unusual decks with unique win conditions? I don't care too much about winrate right now.
I've always enjoyed Mecha'Thun priest if I'm playing just for "fun". The number of times I played someone who I could tell thought that they had me beat (Hah - this guy is in fatigue, I just have to sit him out), and then I pull out the combo...
Winrate is nothing spectacular, particularly for players who figure out what you're up to early. But it is definitely a different play style and way to win.
Here's an infinite Zerek Deck that I created. If you can get the Dragon Soul going with Lyra, or get a couple of returned Zereks down it gets insane! :-)

You and me both dude. Try this on for size. Fun and remarkably effective.

See my signature. "How Many Keleseths" is a super fun mini game, and the deck isn't terrible. It has the value to beat any control deck and I've even taken down some Hunters in casual with it. Don't expect any respectable winrate but I promise it will be fun!

Life before death. Strength before weakness. Journey before destination.
I've just posted Mecha'Thun Shaman, new Shudderwock Shaman (that tries to win the game with raw, stealthed damage) and a kind of APM priest that involves summoning a bunch of 5/5s instead of charge combo. Take your pic! : )
Oh i am a player that always tries new things and builds off meta decks :-). Lately i lost so much games with good decks so did the following and ups it works XD.
I didn't mean to make my climb to rank 5 last night but I did it quickly with 74% winrate over 15-20 games from rank 8 with this off-meta keleseth/hooktusk/graal the shark tempo rogue:
I know you want a fun deck and don't care about winrate, however this is both fun and effective. I beat most hunters I came across but also beat odd control mage, odd paladin, midrange hunter etc. In other words it was effective against a wide variety of different styles of top meta deck. It also just feels good to play, even when you draw most of your pirates before Hooktusk and never draw Keleseth (which happens every game, obviously).
Another suggestion I would make is the new Miracle Mecha'thun Druid:
It is potentially the most consistently fast mecha'thun deck there's ever been because you can fairly consistently draw your entire deck by turn 10 or before. It is also viable because wild pyromancer + a boatload of low-cost spells (including Barkskin, which is important to allow your pyro to keep damaging the board) is actually very powerful at controlling the board. In the few games I played with it I was able to consistently clear my big priest opponent's large minions, and eventually won even after they had played two psychic screams to slow me down. It's a fairly high-skill deck that requires lots of micro-decision-making so approach it with care, but Miracle archetypes where you draw a million cards per turn are always lots of fun and this is no exception. Check out this sweet clip from Dog (which I believe may be a large part of why we are starting to see this deck crop up now):
Love playing the Thief Rogue myself. Winrate tends to suck, but yeah, there's nothing quite like dropping a Pyroblast for one Mana that also buffs your weapon durability and then healing yourself with said weapon. Its pretty slow, and very RNG dependent, but it's a blast at the same time.
If you have a crapton of legendaries and just want an excuse to play them, try going Astral Communion Druid. Winrate's abysmal, but all you need to do is get Astral Communion (and Innervate, preferably) and play big minion after big minion.
There are a bunch of other fun decks too. Weasel Priest, Mimiron's Head Rogue, Mimiron's Head Quest Mage, Renounce Lock, Hysteria's Mill Lock, Mill Shudderwok Shaman, good old Murlock, DMH Warrior with Iron Jugs, etc.

OTK paladin but Holy Wrath + Shirvallah, the Tiger instead of the Uther OTK.
Dead Man's Hand warrior (quite effective too but pretty hard to pilot).
Edit: oh and Pogo rogue.

The Control Mage in my signature is also very fun. It has a lot of RNG possibilities so every game offers something different.

Thanks for all the suggestions! I'll try these out :)

Goblin bomb otk
I made this, but it's not 100% mine. Pyroblast for one mana? yeah

Thief/espionage rouge is super fun, the winrate has dropped off significantly after the druid Nerf. It seems 1 cost druid cards are pretty good.
I just posted my take on thief Rogue, which includes Keleseth. Tons of fun, unless you’re facing aggro. Thief Rogue does not do well against SMORCing.

Try renolock, since I'm pretty sure you mostly play the shitshow format, it's quite interesting to play, though very hard to pilot correctly
Skidaddle skidoodle your Milhouse manastorm is now a noodle
Here are some of my decks I like to play often
Spectral Pillager Rogue homebrew
Menagerie Warden OTK Druid (with deathrattles & N'Zoth)
Ancient Curse Togwaggle Druid
