It would become less friendly towards new players and would be annoying if we did not kill it for turns due your opponent constant pressuring you (assuming it would be aggro), I would say it's a bad idea.
EDIT: Plus nobody would like to count remaining turns.
Then we'd have to change Sap to something like "Silence and freeze (stun?) a minion for 3 turns" (so that it's not taunting or doing any special effects, but then regains it all after 3 turns). And things would just get messy haha. Where would it end.

It wouldn't make any difference. Changing it to a 1 health minion, it will be swept away with the first aoe. There is no way they are surviving 3 turns.
And also other classes don't have a tech like that. It's silence with decreasing attack. Huge advantages for only 2 classes. I think they must be balanced. They are basically removal but you don't want to remove huge deathrattles (Hadronox, Sylvanas Windrunner etc.). So there must be a drawback and it is already how polymorph and hex works in warcraft. that change kills two birds with one stone.

Comparing to Assassination yes it's OP, but Assassination does not see play due to lose of tempo, unlike vilespine slayer which does saw a lot of play for tempo play.
I personally think it should stay this way because some classes need some special removal, that's the way I think. But nice cards you have there anyway, it's a great flavor for warcraft and other videogames as well.

I wouldn’t want to influence cards that work over time like if they give a class a spell your opponent can’t attack for 3 turns with minions imagine the disgust aggro players would feel you being basically Jesus
I'd like to change them to match general shapeshifter lore.
In almost every case when a shapeshifter dies, it reverts to it's true form. I'd love for these frogs and sheep to revert to their original form on the way to the graveyard.
I haven't played a ton of WoW, but I assume that if you die while hex'd or polymorphed that you don't rez as a sheep or frog. You rez as your original form. So, if that's correct, just shows that you don't stay the shifted form after death even in WoW.

¿ Only works on humanoids? In w2 i had polimorphed hundreds of dragons into sheeps and boars... And for me W1 and 2 are far superior than w3 an wow in question of lore and history. Also we had ships :)

I like elementals and totems.

This change would just make Taunt Druid, Big Priest and similar decks much stronger and we do not need that.

But no, these do not need to be changed. As butthurt as some people get about these cards, they are necessary and healthy for the game.
