As it stands, the real reason why vanilla minions aren't played is because they don't offer support to any archetypes. Chillwind Yeti is a perfectly good card, but it doesn't stack jades, doesn't stack C'thun, isn't a dragon, isn't a deathrattle, isn't a combo piece, etc. There is very little incentive to run a vanilla minion over anything else.
This. In old days or in limited card pools cards like Chillwind Yeti and Boulderfist Ogre saw play since they were just very solid and fair standalone cards that don't require anything else to be good. To be frank, cards like Water Elemental, Fire Elemental, Lay On Hands, Ancient of War, Cairne Bloodhoof and even Ysera also slot into this position and these powerhouses have mostly fallen out of flavour by now. Constructed doesn't want fair or good cards anymore, constructed wants cards that pressure alot and cheat and do their job exceptionally well. One of the best ways to cheat without actually cheating is through a combo (as long as this combo doesn't instantly give lethal like old FoN + SR)... but vanilla cards don't incentivize combo's. Unless you can put Conceal on a 30/30, or a 26/26 followed by a Cold Blood or whatever. It's not only the risk vs reward balance or the tempo loss or no additional pressure that makes putting 10 cost minions into your deck troublesome.
Now, the fact that many people mention removals and vulnerability makes me want to shine a light on another topic: overstatted minions as tech. Considering that alot of popular removals are in the Kabal classes, Shaman and Warrior, could it be possible that a 10 mana 15/15 or 8 mana 12/12 could (have been) used as tech (either as bait or downright win condition) against Druids, Rogues or Paladins?

even a 15/15 is fine. Keep in mind we are not talking about facing aggro decks because there is no point discussing any card over 8 mana. Like seriously, its so easy to go into late game and not have a single target removal. There are so many control match-ups where its a top deck fight. It's so easy to tempo out removal by just putting out threats on board. Like for Renolock- Abyssal enforcer, Rag, Twilight drake, Mountain Giant, Slyvannas, Emporer generally take the bait. Most of the classes have cards that can bait out the removal (some midrange decks like Dragon Priest run only 1 death, mages also run only one polymorph).
Like seriously, 20/20 minion wont see play? Wow. I'll put it in all my decks everytime man!
the only 2 Vanillas that ever saw play in constructed were Yeti and Bog Creeper, the former was because the card pool was limited, the later was because of a crusher shamman variation called bogchamp shamman or mean shamman that saw play in tournaments because it was able to target some agressive decks, otherwise vanillas see no play because the effects of the cards are more important
The problem isn't ruining constructed but ruining Arena. A 15/15 neutral common might see zero play, but will ruin Arena for all entirety. I'm glad Blizzard isn't trying to push a strong vanilla 10 mana card and ruin arena while likely still having it see zero play.
In MSG? None would see play. If the meta slowed down it would need to have a game winning impact to see play, and would depend on how much removal is around.
It isn't that they aren't useful and wouldn't sometime soon work, but if it gets hit with removal and your opponent drops another card you are losing a lot of tempo and value. If you play a big minion (Say Rag or Ysera) with an effectand it gets cleared cheaply you at least got the tempo/value of the effect.
So unless you have a combo to tie with it I think probably needs to be 30/30.

Bog is not vanilla, he have taunt.
Vanilla I see in constructed are Yeti and Ogre 6/7 for 6 manas, but in past when only classic packs exists before Naxx release.
Let's see we have a (0) 5/5 Taunt, a (4) 8/8, a (4) 4/8, a (0) 8/8, a (2) 3/4, a (1) 2/3 all of which see play in competitive decks. I guess if they just print vanilla cards with statlines like that, they'll see play.

That's easily fixed. Just make it a legendary.
Normally vanilla cards are too boring to be legendaries, but if it's sufficiently big, the size alone would give it the uniqueness it needs to be a legendary.

Interesting? That's relative to the individual. For me, a 10 mana 15/15 doesn't wow me, but maybe 20/20.
Used? Never. No 10 mana minion lacking an ability will ever be used, which is why I say 20/20 for "interesting."
