I'd say Harbinger Celestia, but only because I don't think the other two are good enough to be chosen.
I already picked a 3-cost card so Prince Taldaram could be useless if my Lone Champion gets stuck at the bottom of my deck, but even if it doesn't, I'm not sure that avoiding all 3-cost cards can me a wise move.
For what concerns Hemet, Jungle Hunter I don't know, I would have to build the entire deck around him but I don't know if it is an ok choice.
Prince is the safe pick, it is a 3 mana 3/3 which is fine.
Hemet could be ok, if you would want to try and make a deck around that, but that is a bit risky.
Celestia is probably gonna suck, since your opponent has the power to decide what will she become. That being said, it can provide some insane moments, but i wouldnt rely on that.
Hemet is suprisingly good in arena. He gives you better access to your late game when you need it. You really don't need to build around him, he's just decent stats and less of a chance of drawing dead cards in the late game.
Never pick celestia, it could be insane cause it could mean a huge tempo loss for your opponent if they don't want to give you a big minion and that's all they have in hand or you would just give you a "free" big boy but on reality what's the actual chance that he has nothing but that big minion? On most cases you'll get a small dude and then or opponent drops their big boy so celestia is incredibly lame.
You are very early on the draft so picking hemet could be an option, but it's too risky honestly, you would need to pick up mostly 4+ drops but that could leave you on a bad shale early on and if you don't have at least a decent early game you just get rolled over and out tempoed in arena really easily.
I would pick taldaram 100% even with a 3 drop already on the pool, i would even just continue to draft without having taldaram in mind, if you get a good 3 drop just go for it, and if the 3 drop is the better of the 3 cards also go for it, you got a legendary pick which is nice but you definitely got the short end of the stick with this 3 picks so just look at taldaram like a vainilla 3/3 which isn't amazing but it's fine by arena standards.

id go for hemet. he's a 6/6 body for 6 mana and if you are in topdeck-mode you dont get low minions.
