So I have 3 Legendary cards that I have recently opened and not sure if I should dust or not. I never see any of them currently in play but wanted to gauge to see if anyone thinks there is potential for them in the future or should I dust them which will equal to about 2800 dust!
I rarely play hunter or rogue but can see myself playing rogue more in the future. I am mainly mage/druid but I dable a fair bit with warlock as I managed to score some pretty sweet cards from the latest expansion.
Shaku is an annoying card to deal with. One of those cards that got better over time. If you don't ever play rogue, his value drops. You also steal gold version of cards, I think, so it has that going for him. But if he doesn't fit your playing style ...
Genzo the Shark is the most expendable of those you listed. I tried giving him a shot in a Buffadin deck and it still didn't work out.
Lakkari Sacrifice has a 2019 date with wild, but I doubt it will be viable. If you don't play warlock or have luck with discard mechanics ... I have all the discard legendaries (thanks, Hearthstone packs) and the others can work in a deck with a few discards scattered in. The quest just takes too many discards, and too much risk and on top of that has a lousy payoff.
Knuckles never finds a hunter deck despite having some good features. Expendable, considering hunter can get by without legendaries.
Kazakus works in wild Reno decks, priest (esp. death knight Raza decks), and I've even made a decently performing Frost Lich Jaina deck with it. Some death knight warlocks are also using it if they have Krul. Kazakus has saved me plenty of times.
Patches' luster might fall off if PIrate Warrior can't recover from the upcoming nerf. Still, he finds a way.
both patched and kazakus are being rotated early next year so you wont be able to get much value off of them. Unless you really want to play singleton decks or really want to play pirate warrior i would hold off and craft cards from later expansions.

I will go against the grain and say you can dust them all, with Shaku being your highest priority if you value maintaining a collection. If you don't care about collecting cards, dust all of them saving Shaku until you are absolutely sure about not wanting to play rogue. Out of all those cards, shaku is the only one that sees play in good decks.
Don't ever dust anything unless you really need the dust.
Knuckles and Genzo have never seen any real play so those should be safe to dust first.

Way too early to say that, discard is bad because of several reasons, you lose a ton of long term value because you lose cards from your hand, you lose a ton of consistency because discarding is random, and you lose a ton of tempo in the turns after you discard because when you have fewer cards to work with, you have worse turns.
Lakkari sacrifice solves the long term value issue, or at least makes that problem not as big a deal, because after you complete the quest, you get theoretically infinite value! However, lakkari sacrifice is still extremely inconsistent, and you still have short term tempo issues when playing discarders, neither issue can be combatted by your deck.
If Blizzard were to print cards that negated these weaknesses, discard could theoretically work. Like, a 2 mana 10/10, discard your entire hand, would be blatantly overpowered, terrible card design, and make Lakari sacrifice amazing. The issue isn't the mechanic itself, its blizzard finding a balance between the power and drawback of discard that's good for the game and effective.

Genzo is basically just Jeeves except u can use him in standard for another couple months. I know there were a few decks running genzo in ungoro, but I don't think there are any now. If there was something specific I wanted to craft I would dust genzo the rest I would keep. If there was something I really really wanted right now I would also dust knuckles. Fyi I have a knuckles and shaku atm. I really like shaku I only use knuckles for the memes, but I have hope.

That golden Shaku is a real pain.
Shaku is absolutely a keeper, but in gold you could replace it for something you actually play...
In itself, Shaku fits nearly any type of Rogue, but it is hardly a compelling card.
The other cards are so situational that there's no point in keeping them.
If you are about COLLECTING cards, then NO!
If you are really in need of dust, can't you just wait .... play some Arena.

I tried having fun once. It was awful.
Shaku, Kazakus and Patches are a must keep for me. The rest can be dusted if need the dust.

Why not check out Genzo in token druid instead of one Jeeves, it might be good, especially with that big ass taunts that druid now sports.
