I'm not sure the logs tell you what cards are stuffed in by mal so the trackers can't tell. They CAN figure out how many were pulled though and probably just need to design how to best display it.
It doesn't because the tracker only knows the cards in your deck that you've put there. It doesn't track Roaring Torches either.
Actually Deck Tracker does track Roaring Torches. It knows when you play Forgotten Torch, so it just adds a Roaring Torch to your list of undrawn cards and adds 1 to your deck size. It also tracks things like Beneath the Grounds, Gang Up and Entomb. It doesn't and shouldn't track which legendaries Malchezaar adds to your deck because the game doesn't give you that information. Same way Deck Tracker doesn't know what's in your deck after you play Golden Monkey or Renounce Darkness. They could update Deck Tracker to increase your deck size by 5 when you play a deck that includes Malchezaar though.
This isn't like it would be cheating, it would be cheating. If you were told which five random cards you got, you have a advantage which you are not meant to have, namely knowing which cards you got something which you would find out as you drew the card.
The only way to make it fair is if if it were to add a card as you pulled it out. Having something like this would also work if you say had the Golden Monkey (that's including the minions you get from the monkey because again you can't have knowledge of what is in the deck until you draw it.) , or if you used Entomb on a enemy minion.
It'd be the equivalent of cheating really, I mean, it'd make something that's supposed to be random not random anymore, you're not supposed to know what those cards are for a reason!
This would be outside the bounds of information available to the player. In Diablo 3, the overlay is able to provide detailed information not available to the player, including identity of unidentified items, positions of enemies not yet in map range. This is because the game needs to load the sounds and graphics for these in advance. Hearthstone doesn't have this technical limitation so I doubt the information is there in the first place.

Yep, Ben Brode said that you can use any programs in hearthstone as long as it's something that you yourself would be able to do with pen and paper.

Malchezaar is not meant to be a reliable card.
It's there for fun mostly. Good only for fatigue.
If you're using it as a highly competitive card for any deck 'because of legendaries', you're doing it wrong.

that's definitely cheating. the reason why it's not considered a cheat now is is you already know what's in your deck
