is Wickerflame Burnbristle and Lay on Hands necessary? i don't own them
[card]Wickerflame Burnbristle[/card] is useful as anti-aggro, Lay on Hands isn't used much in recent lists mainly because of The Curator.
Medivh is nice against control, Lightlord can be game-winning against aggro decks. Some variations do run 2x Ivory Knight and 2x Spikeridged Steed.
So is there anything special for me to do against a quest rogue?
Keep equality at mulligan, try to swing in the turn he uses the quest or the one after. It's one of the hard matchups, if you gain board after he has played the quest you can still win.

Bringing back a lone Tirion Fordring is pretty powerful on it's own.
Acidic Swamp Ooze should be a better replacement if you find a lot of aggro warriors/paladin, Harrison Jones works best against slower decks like taunt warrior and discover mage.

As a tech against what?
You can remove a mistress of mixtures for it, it is a tech against decks like taunt warrior where you make them lose a taunt for the quest or alexstrasza in discover mages. Also you can use it before equality consecration/wild pyromancer.
None of these are a reasonable reason to tech Dirty Rat.
Quest Mage is not a significant portion of the ladder. If you tech against it at all, you are a bad player.
"Aggro Hunter" is not a part of this meta. Midrange Hunter is a favorable matchup and Dirty Rat is not the card that makes the difference in it. You beat Midrange Hunter by surviving the onslaught of early minions and letting them run out of steam since they have little draw, and this deck is already well-equipped to do just that.
Quest Rogue is not a reason to tech Dirty Rats. You beat Quest Rogue by pressuring them, and Dirty Rat doesn't actually do that. Control Paladin is simply not well-equipped to deal with Quest Rogue, and putting in Dirty Rat is like putting a band-aid on missing limb. If you're running into lots of Quest Rogue, you shouldn't be playing Control Paladin. Dirty Rat against Quest Rogue is only a good plan for Taunt Warrior, which runs the card because it synergizes with their deck anyway.
Most importantly, you don't tech in cards. You tech against decks. Starting a question with "how do I tech in Dirty Rat" just displays how little that person knows about deckbuilding and tech choices. You must ask the question as "how do I tech against X deck".
It can be good against quest rogue and aggro druid also though, some variants of control paladin run it at high legend.

The point I'm trying to make is not that Dirty Rat is unacceptable to put in, but rather, that "any way to tech dirty rat in?" is a bad question. You don't tech in cards - you tech against decks and strategies. No one can answer the question of how to tech in Dirty Rat because it leaves out crucial information, such as what exactly Dirty Rat is being teched in as a response to. The correct question is "How do I tech against X?"
And no, Dirty Rat is not a reasonable card to include in this deck for the reasons you listed. It doesn't make sense for this deck's game plan, and as a tech choice it is inefficient. If you think including Dirty Rat in this deck is a good idea in order to deal with Quest Rogue, Midrange Hunter, and Quest Mage, you simply don't understand how ladder works. Putting crabs in is also nonsensical because this deck is already teched against Pirates (Forbidden Healing, Gluttonous Ooze - arguably even Wild Pyromancer, Consecration, Mistress of Mixtures, and Doomsayer would qualify).
That is not to say Dirty Rat makes no sense at all in this deck, but rather that you don't seem to understand how you would be using it.
