Mulligan Guide: You should look for Mad Scientist, Doomsayer, Loot Hoarder, or Acolyte of Pain. They will help you draw into the cards you need, put your Secrets in place, and either destroy or delay his board.
Anub'Rekhan can quickly overwhelm you as he will just keep making Nerubians nearly every turn. It's very difficult to gain board control since you can't match his output, so Freeze Mage is a great choice to use against him. You should only be concerned with burning his face and freezing his minions if you want to succeed in this encounter. Your life total will take a nosedive as he continues to churn out minions, but that's what the Ice Blocks are for. Persevere and you will soon be toasting marshmallows over his charred shell.
Alexstrasza and Emperor Thaurissan are not absolutely crucial to this deck, although Alex can really help you close the gap to push through that last bit of damage. I would say that Archmage Antonidas is pretty important, as he can help insure you have enough damage to continue torching Anub'Rekhan. If you have to replace cards you could consider minions or spells that do additional damage, such as Medivh's Valet, Dragon's Breath or Firelands Portal.
If you would like to consider other deck options you may want to try a Ramp Druid deck to quickly summon large Taunt minions. This type of deck will allow you to make efficient trades while slowly chipping away at Anub'Rekhan. I have not found it to be as consistent as Freeze Mage and if you ever get behind on the board it's very difficult to catch up. Here are some other popular decks for this encounter below.
