So the question that everyone asks me. Why no Emperor Thaurieidfihssen(however you spell it)?
Emperor is only good when you are ahead on board but very bad when behind on board. Wasting 6 mana for a 5/5 that does not even affect the board is a huge tempo loss as a Priest. A Priest with board control usually wins games anyways so Emperor is very bad in the standard Control Priest.
tl;dr: it's a win more card.

Another question. Why no Resurrect???
Resurrect is a fun card and can be insane when you build a deck around it. However, as a believer that two Light of Naarus is a must in a deck with two Blademasters and Auchenai Soulpriests, Resurrect is sometimes too random. Space is too tight for a card like Resurrect to make the list. 

EDIT: Mind Control Tech is so good against Zoo's(which is the best deck in the game) and Paladins(which will probably see more play due to the new Dragon Consort). Cut one Thoughtsteal because since this deck is so greedy, you won't need a second Thoughtsteal to win the control match.

Piloted Shredder is the best 4-drop in the game. I'm still iffy about it but it makes you curve out nicer.
Toshley trades with Emperor Thaurissaun with VALUE and can kill two Sludge Belchers without dying. The spare part has synergies with Shadow Word Death and Cabal Shadow Priest. You can get some serious value off the spare parts in a control match. Not saying this is the best list, but I've had some success with it on ladder.
For example, you can Reversing Switch a 5-2 minion and take it Cabal or something. Whirling Blades a 4-attack minion to kill it with SW: D. All the other spare parts are pretty decent as well, even the taunt. It gives you more spells for you to use it with Pyro in the late game. A 6-mana 5/7 is hard to deal with for most. If your meta is super controlly, add a Black Knight so you can combo it with the Taunt Spare Part. 
Two Nova's for Zoo and Paladin.

Vol'jin wasn't performing well and sometimes it just sat in my hand too long when my opponent didn't play any minions. If Vol'jin does not make the list, Holy Smite has no place in the deck.
The replacement is Shrinkmeister and SW: P.  I'm not really a huge fan of these two cards but it proved to be pretty good in testing. I didn't want to have Shrinkmeister to only have synergy with Cabals, so Pain has made a place in the deck. 

With the diminishing popularity of Druids(at least in my meta), TBK is no longer good enough. Dark Cultist has always been a questionable choice for me so I included Piloted Shredder and Loatheb. Shredder is the best 4-drop in the game and I included it in the deck to smooth out my curve. Loatheb is in because Loatheb is Loatheb! 5/5 for 5 and a very solid battlecry,

Replacements:

Sneed's, Emperor Thaurissan, Vol'jin, Harrison Jones, TBK, Zombie Chow, Shadow Madness are good/okay replacements

Mulligan Guide:

Hunter: Keep Northshire Cleric, Power Word: Shield, Wild Pyromancer, Shadow Word: Pain.
Keep Blademaster if you have Circle or Cleric. Keep Auchenai only if you have circle. Pyromancer wins you games in this match-up. Don't just throw it down as a minion. Auchenai + Circle is not as good vs Face Hunter because by turn 4 you take too much damage. However, it is still a decent keep.

Mech Mage: Keep Northshire Cleric, Power Word: Shield, Wild Pyromancer, Shadow Word: Pain, Circle of Healing, Injured Blademaster(only with circle and/or cleric), and Auchenai Soulpriest. Board clears are very important

Druid: Keep Thoughtsteal, Auchenai Soulpriest, Circle of Healing, and Injured Blademaster.
Keep Northshire Cleric only if you have Power Word: Shield in hand or the Blademaster+Circle combo.

Warrior: Keep Auchenai Soulpriest, Piloted Shredder, Thoughsteals, and Circle of Healing. Auchenai+Circle against a Grim Patron board is how you win against Grim patron warrior. If it is a control warrior, you are very favored anyways.

Rogue: Keep Injured Blademaster, Auchenai Soulpriest, Piloted Shredder, and Circle of Healing. Keep Northshire Cleric only if you have Power Word: Shield in hand or the Blademaster+Circle combo. Be greedy with Auchenai+Circle. That combo is one of the only ways Priest can ever gain board control in this match-up.

Shaman: see Mech Mage

 

Priest mirror: Keep Auchenai Soulpriest, Injured Blademaster, Circle of Healing, Sylvanas Windrunner, and Thoughtsteal. 

Warlock: see Mech Mage(if you do not know which variant your opponent is running). If you know that it is handlock, go for Shadow Word: Death, Thoughsteals, and cards that give you Cleric value(drawing an insane amount of cards against handlock is one of the only ways you can win this match-up).

Paladin: Keep Northsire Cleric, Power Word: Shield, Injured Blademaster(only with circle), Auchenai Soulpriest, and Wild Pyromancer.

Match-ups:
This deck destroys: Control Warrior, Paladin, Shaman, and Priest mirrors.
If you play your cards right it is almost impossible to lose against these match-ups.
Against warrior you just out-value them with your cards and pally just dies to Wild Pyro and Auchenai.
This deck runs more strong minions than other Priest decks so when they run out of answers you blow by them most of the time. Shaman just gets rekked by priest.

Good match-up against: Hunter, Zoolock, Druid, mech/tempo mage
Aggressive decks gets wiped by board clears so as long as you mulligan for them and get them, the priest late game+heal should win against these aggressive decks. As long as you draw decent against druid and they don't open Wild Growth and/or a perfect curve, it's around 60/40.

Bad against: handlock, rogue
these match-ups are just bad. Priest can't deal with 4/9 minions and handlock's endless threats. Rogue's bladeflurry wipes any of priest's board and it's kind of hard to kill them because priest runs no burst.
